The original recipe for the ice cream base I found on Gemma Stafford’s
gorgeous baking website, I’ve done my own style with the flavour options, which
hopefully you will try and love. This ice cream is not a rock hard type it is
very light and fluffy, and almost mousse-like. It is super simple to make and
takes just a few minutes to whip up!
No Churn Ice-cream:
500ml thickened cream
390ml (one tin) sweetened condensed milk
2 tsp vanilla extract
Flavour Options:
1 Violent crumble bar
4 Tbs Nutella
¼ C chopped hazelnuts
4 Tbs tinned caramel (“top ’n’ fill”)
2 tsp pink salt flakes
¼ C chopped dates
3 Tbs golden syrup
Whisk the cream either with a mixer or by hand until it thickens
and forms stiff peaks. Add in the condensed milk and vanilla extract and whisk
again (on med-high or until it stiffens more and forms stiff peaks again). This
is the ice cream base you can flavour with whatever you desire!
I split my base in to 4 separate bowls and flavoured each
one differently:
Hokey Pokey:
Chop or crush a violent crumble bar in a mortar and pestle. Stir
through the ice cream base. Place in a container, cover and freeze overnight.
Salted Caramel:
Slightly soften the canned caramel in the microwave. Stir through
the ice cream base along with the salt. Place in a container, cover and freeze
overnight.
Sticky Date:
Stir the chopped dates through the ice cream base, and
gently fold through the golden syrup so it is rippled through. Place in a
container, cover and freeze overnight.
Ferrero Rocher:
Slightly soften the nutella in the microwave. Stir through
the ice cream base along with the chopped hazelnuts. Place in a container,
cover and freeze overnight.
All these flavours are totally delicious, this is definitely
a ‘sometimes’ treat because the flavours are just so decadent. These ice creams
are the perfect match for a warm chocolate pudding or apple crumble right from
the oven. But be careful! All of these flavours seemed to magically disappear right
from the freezer at my place.
